“I did part of my placement in gourmet patisserie with Christian Têtedoie, who owns 3 restaurants, including a bistro and a Michelin-starred gourmet restaurant. So there was a really diverse range of preparations. My duties were very varied: setting up with the team, preparing ice creams and sorbets, dressing desserts.
My best memory is when the team let me do the service for the Phosphorus Bistro completely independently. It really gave me confidence in myself and in my abilities.
Institut Lyfe gave me the techniques and a working method that I continue to apply today, as well as knowledge about products and the managerial skills to open my own place one day.”
